I know there are numerous ways to make chili — it is a very personal dish, and you can add almost anything that you like to make it your own.
On a cold fall or winter’s evening, chili can be wonderfully comforting. My recipe was given to me by my younger sister. It is called Hodgepodge chili. Both of us have adapted the recipe, per my statement above, to make it our own. Instead of adding beef and pork, I add turkey sausage and ground turkey. This lightens the dish. You can use any type of bean that you wish, but I use kidney and great northern beans, and will not alter. All of the ingredients that I use are organic — the beans, tomatoes, chicken broth (sometimes homemade), vegetables and herbs.
Toppings can be anything you wish — shredded cheese, sliced scallions or diced red onion, chopped avocado — again, anything your palate desires. I stick with a smattering of shredded cheddar cheese and a few crumpled saltine crackers. If I’m serving for a family meal, I will put out more toppings, but for my husband and me, I keep it simple.
